RecipesOhmigosh, you've got to try this for dinner, then do what I figure should be done for every good chicken recipe:try it on mushrooms as a breakfast dish. I've been using the sliced almonds instead of grinding them up, it looks great.
4 boneless skinless chicken breast halves
1 cup ground almonds
2/3 cup grated Parmesan cheese
salt and pepper
2 tbsp all purpose flour
2 large eggs, fork-beaten
Place 1 chicken breast between 2 sheets of saran wrap and pound to 1/2 inch thickness. Repeat with rest of chicken.
combine next four ingredients in small shallow dish. Dip into the bowl of egg mixture, then almond mixture until coated. Arrange chicken in single layer on greased foil-lined baking sheet with sides. Cook uncovered in 350 oven for about 45 minutes until no longer pink inside. Serves 4.
