4 slices bread (any kind), crusts off is a nice touch
soft butter
banana, sliced
cinnamon
2 eggs
1/2 cup milk or cream (or mixed) (good way to use up left over milk/cream)
salt
sliced almonds
3 Tbsp cornmeal
icing sugar
grated chocolate
In pieplate beat eggs with milk and dash of salt.
In another pieplate mix almonds (enough to cover bottom of plate) and cornmeal.
Butter 1 side of each slice of bread, top 2 of the slices with generous layer of banana slices. Sprinkle with cinnamon. Top with the other 2 slices and press down a little.
Dip sandwiches in eggmixture (don't forget sides of sandwiches), then dip in almond mixture, making sure to get generous amount on there, pressing down a bit on bread.
Preheat grill to 350 degrees. Melt butter and grill sandwiches on both sides till golden brown. It is important that the centre of the sandwich gets heated enough to "melt" the banana, so don't try to grill it too quickly.
To serve, cut sandwiches on the diagonal and place on plate with garnish of fanned strawberries, kiwislices, blueberries or other other fruit. Sprinkle with icingsugar and grated chocolate, if desired.
Serve with (warm) maple syrup.
