Salmon Log

1 or 2 cans salmon (use red not pink)
1 Philladelphia cream cheese
1 tablespoon lemon juice
2 teaspoons minced onion
1 teaspoon horseradish
1/4 tsp salt
1 tsp liquid smoke (I often forget)
1/2 cup chopped walnuts or pecans
3 tablespoons chopped parsley

Mix well, shape into a round or log. The walnuts and parsley go on the outside.

***tip: while you're shopping, choose a strong cheese and make the same as above without the salmon. Shape it differently...new appie.

Mushroom Rolls

or serve with crackers ---get those dried up toasted things that taste good no matter what you put on them.
2 tablespoons butter
1/2 pound of mushrooms finely chopped
1 1/2 cup ligth cream
2 tablespoons chopped onion
loaf of bread or the cracker idea... you can roll them on a slice with crusts removed and make little logs if you don't want the toasted cups.

Cheese Ball with Beef

1 8 oz cream cheese
8 slices smoked beef
1 1/2 bunches of green onions (who thought that measurement up?)
1 teaspoon garlic salt
chopped beef for garnish.

Whirl together in food processor, shape into ball, garnish when you unfreeze. Serve with melba rounds.

Seven Level Dip

Go to Thriftys and buy their seven layer dip, everyone likes it and if they aren't from BC, they'll never know.

Marinated Chicken Wings

Buy fresh and then freeze before cooking. Easy Peasy as the Brits say.

family package chicken wings
1 cup soy sauce
3 tablespoons brown sugar
3 tablespoons creamed honey
crushed garlic, as desired

Heat and melt ingredients for sauce, stirring to prevent burning. Remove from heat. Place wings in sealable container after cutting off wing tips. Pour marinade over the wings, seal and freeze or refrig at least overnight. Bake after thawing...1/2 hour at 350 degrees. Turn once during baking.

Prosciutto Wrapped Breadsticks

Dry breadsticks (boxed Grisols are good)
prosciutto slices
Butter
grainy mustard

Mix butter and mustard half and half. Spread on prosciutto and wrap around breadsticks leaving the bottom of the breadstick unwrapped for holding.

Asparagus Wrapped with Beef or Ham

Cooked asparagus al dente, refridgerated
Horseradish
Mayo
rare, thinly sliced beef or
thin ham slices

Mix mayo and horseradish and spread on meat. Wrap around asparagus.


Stuffed Cherry Tomatoes

Cherry tomatoes
Feta Cheese or cream cheese mixed with garlic powder
Paprika and parsley or celery leaves for garnish

Hollow out tomatoes
Stuff with a little feta
Garnish as desired

Prosciutto Wrapped Watermelon and Brie Fingers

Pinky finger-sized watermelon rectangles
Thin slices brie cheese (about the same dimensions as the watermelon fingers)
Slices prosciutto ham

Place a piece of brie on top of each watermelon finger and wrap each with a sliced of ham. Secure with a toothpick
