2 tsp. butter
1 tsp olive oil
1 med. Granny Smith apple
3 teaspooons white sugar
2 eggs separated
1 tablespoon white sugar
Zest of lemon
1/2 teaspooon vanilla
1 teaspooon flour.
Optional: Maple syrup and Whipping Cream
Peal and core Granny Smith apple, slice into rounds
Heat skillet with 2 tsp. butter, 1 tsp olive oil
Add apple slices into the pan and sprinkle with 3 teaspoons sugar. Cook apples turning
once.
Meanwhile, separate 2 eggs, beat whites with a 1 trablespoon. surgar. Set aside.
Beat yolks with the zest of a lemon, 1/2 tsp. vanilla, 1 tsp. flour. Add this mix to whipped egg whites (in small amounts)
Pile apple rounds into 2 individual ramekin dishes, divide mixture. Bake in 350° oven for 15-18 minutes, until golden brown and set. Serve as shown, or Invert onto serving plate and garnish with small amount of maple syrup and a dollop of whipped cream.
For Atkins:
This recipe can easily be made for the Akins eaters. Just substitute Splenda
for sugar and the Akins Bake mix for flour. Use a small garnish of Atkins syrup
and whipped cream.
Tip:
Always use a mix of butter and olive oil when cooking something in butter as
the oil makes it so it does not burn so readily.
