Apple Tart

I first tasted this at That Dutchman's Farm tearoom in Nova Scotia and tried for ages to duplicate it with no luck. After writing to the owner and begging she shared it with me! It is easy, impressive and delicious!


Apple Tart
Pastry
2+3/4 C all purpose flour; 1+1/4 C butter; 3/4C sugar;1/2 tsp.salt; 2 tsp. baking powder; 1 tsp.vanilla;
Filling
8 cooking apples;1/2 C sugar; 1/2C raisins; 1 Tbsp. cinnamon;2Tbsp. milk; 2Tbsp. sugar.
Mix flour, salt,and baking powdertogether.Cut in butter with pastry blender. add vanilla(I use a bit more) and knead till smooth. Wrap, and chill 30 minutes.
Core, peel and slice apples.Mix with sugar and raisins and cinnamon. Set aside.
Grease 8 inch springform pan. Using 2/3 pastry line bottom and sides of pan.Fill with apple mixture. Roll remainingdough out on a lightly floured board and cut into 1/2 inch strips. Weave strips lattice fashion, directly on top of filled tart. Trim ends and press strips to moistened edge of side crust. Brush with milk mixed with sugar. Bake at 325 deg for 1 to 1+1/2 hours till golden and apples are done.
Serve warm or cold with or without whipped cream
