For the tea:
10-12 orange pekoe tea bags or whatever tea.... [for a minty flavour, add three
mint bags]
1 tsp. baking soda
16 cups water
For the sugar syrup:
1 cup water
1/2 cup sugar
For garnish:
lemon wedges

make ice cubes with tea or freeze lemon or mint into cubes. Do not use regular
ice cubes as it dilutes the tea
Place tea bags and baking soda in a heat resistant container. Pour 4 cups of boiling water over the tea bags and let steep for at least 15 minutes. Add the remaining 12 cups of water and remove the tea bags. Let cool.
Bring pot with one cup of water to a simmer and add the sugar. Stir until all sugar dissolves completely. Remove from heat and let cool.
Add the syrup sparingly to the ice tea, OR let your guests add it to their own glasses. Add the ice cubes and decorate with mint leaves and/or lemon wedges.
I keep the tea in my fridge for up to a week and it stays ok. Don't forget to add the baking soda as it makes a big difference.
