9 eggs
2 cups milk
1 1/2 cups bread cubes, crusts removed
1 cup grated cheddar cheese
1 pound pork breakfast sausage, cooked and drained (optional)
2 cups asparagus, cut into 1" pieces and steamed just until tender
1/2 cup sliced mushrooms
Salt and pepper to taste
Mix the eggs, milk, bread cubes, cheese, sausage (if desired), asparagus, mushrooms and salt and pepper together. Cover and refrigerate overnight. Remove from refrigerator 3/4 hour before baking. Bake in a greased 9 X 13" pan in a preheated 375 degree oven for 45 minutes.
Serves 8
I haven't tried it with the sausage yet, makes a nice vegetarian dish. I half
it all the time, using 5 eggs, in an 8 X 8" pan. It's a very attractive
dish!
