375° Serves 4-6
1 cup broccoli florets
3/4 cup sliced mushrooms
2 green onions
1 Tblsp. butter
1 cup cooked ham (or bacon) cubed
8 eggs
1/4 cup water
1/2 tsp. Italian seasoning
1/4 tsp. Dijon mustard
1/4 tsp. garlic salt
1 1/2 cups shredded cheddar
1/2 chopped tomatoes
Saut`e broccoli, mushrooms and onion in butter. Add ham or bacon. Beat eggs and water add mustard and seasonings. Stir in tomatoes, cheese and veggies. Pour into 1 1/2 quart, sprayed with non-stick, dish.
Cook 22-27 minutes @ 375° Serves 4-6 people.
1 Tblsp. butter
1 cup cooked ham cubed
1/2 cup onion
1/4 cup chopped green pepper
4 eggs
Salt and pepper
Melt butter in baking dish, covered
Add ham, onion and pepper and cook about 2-3 min. until onions tender and clear.
Beat together eggs and S&P and add to the above. Cook covered for 2 1/2 to 3 min. May sprinkle a little grated cheddar on top in the last 1 min. for color. Cook until set in the middle. Let stand for 3 min. Cut in 4 wedges.
I found this a bit skimpy for 4 servings. I will either make it in individual
dishes next time so that it is 2 eggs per person, or
reserve it for a "ladies only" breakfast. I don't usually care for
microwaved eggs, but this is a good recipe and very tasty.
