Our Canada Bed and BreakfastRecipes

I am baking this right now, thought I should add it. I think it is from the Rise and Dine (American one), Albion Guest House (Lise) raved about it, and yes, just fabulous!!! Today's bread is banana (1 cup, nice and moist), 1/2 cup each dried chopped apricots and craisins (not listed on the list below, but I thought it would be good). I made 1/2 without nuts since my guest is allergic. Apples make it nice and moist, too, I 've made that one. Yummmmm.

A-to-Z Bread

3 cups all-purpose flour
1 tsp baking soda
1 tsp salt
3 tsp ground cinnamon
1/2 tsp baking powder
3 eggs
1 cup vegetable oil
2 cups sugar
2 cups A-to-Z mix (see below)
3 tsp vanilla
1 cup chopped walnuts or almonds

Preheat oven to 325 degrees. Sift the flour, baking soda, salt, cinnamon, and baking powder; set aside. Beat the eggs in a large bowl. Add the oil and sugar and cream well. Add the A-to-Z mix and vanilla to the egg mixture. Add the dry ingredients and mix well. Stir in the nuts. Spoon into 2 well greased loaf pans. Bake for 1 hour.

Makes 2 loaves.

A-to-Z mix - Use 1 or a combination of ingredients to equal 2 cups (except as indicated):

Grated apples, applesauce, chopped apricots, mashed bananas, grated carrots, pitted and chopped cherries, freshly ground coconut, pitted and chopped dates, ground eggplant, finely chopped figs, seedless grapes, honey (omit sugar in recipe above), 1/2 cup lemon juice, marmalade (omit 1 cup sugar in recipe above), mincemeat, chopped oranges, fresh or canned chopped peaches, 1/2 cup chopped peppermint leaves, chopped pears, drained crushed pineapple, 1 cup chopped pitted prunes, canned pumpkin, raisins, chopped rhubarb, fresh or frozen (drained) strawberries, cooked tapioca, grated sweet potatoes, chopped tomatoes (add an extra 1/2 cup sugar), cooked and mashed yams, plain or flavoured yogurt, grated zucchini.
