Baked Fresh Cranberries

From the "Yukon News" Klondike Cuisine by Nelson Lewis

2 cups fresh cranberries (500 ml)
1 1/3 cups sugar (300 ml)
1 tsp. lemon juice ( 5 ml)
1 tart apple, cored, not peeled, chopped fine
3 tbsp. walnuts, chopped ( 50 ml)
1 small tomato, chopped fine ( 50 ml)
3 tbsp. Graham cracker crumbs
1 tbsp. melted butter ( 15 ml)

Mix all ingredients except the butter and cracker crumbs and spoon into individual custard cups or a casserole, and bake in a 325 F. (160C) oven for about one hour. Fifteen minutes before the dish is finished, mix the butter and cracker crumbs and sprinkle over the berries. Return to the oven and continue cooking. Great with meat or poultry, or add a little more sugar, a dash of orange liqueur (after they come out of the oven) and a dollop of whipped cream and serve them as dessert.
