Here's an overnight recipe that always pleases the guests.

Baked Pepper and Ham[optional] Frittata

[serves six]

4 English muffins
butter
2-1/2 cups milk
5 eggs beaten
1/2 cup heavy cream
1 tsp. Tabasco sauce
1 tsp. garlic powder or freshly ground garlic
1/4 tsp. salt 1/4 tsp. freshly ground pepper

1 cup chopped peppers..red, orange, yellow
1 cup chopped white onion
1 cup shar Cheddar cheese
3/4 cup Monterey jack cheese [with caraway seeds if desired]

THE NIGHT BEFORE
Break muffins in half. Butter one side of each. Line up in 9by12 glass baking dish.[will overlap] Mix the milk, cream, eggs, tabasco sauce, garlic.Pour over muffins. Top with ham if using. Sprinkle cheese and onion over top. I add lots of fresh veggies to this. Usually top with tomatoes, zucchini, mushroom, laid out in attractive slices and then top with cheese. Cover with wrap and put in the fridge overnight. Have a great sleep, and in the am, bake in oven at 350 until puffed and golden, and firm in the middle.[about 40 minutes.]

I serve with sour cream and salsa and decorate the plate with nachos and chives from the garden standing in the sour cream/salsa mixture...add some melon or whatever to the plate. Serve with focasia bread or croissants or...
