Banana Stuffed French Toast

3 Thickly sliced pieces of french stick
1 sliced banana
Toasted coconut
2 Eggs
1/3 Cup Milk
Vanilla

1. Blend egg, milk and vanilla
2. Slice French stick slices almost in half, horizontally
3. Spoon a little egg and milk mixture inside the sliced bread
4. Line with banana slices
5. Sprinkle with toasted coconut
6. Dip stuffed slices in egg and milk mixture
7. Grill at 400 until nicely browned. Turn and grill other side
8. Serve with bacon or sausage and maple syrup and sprinkled with a little toasted coconut.

Serves 1


Cream Cheese Filled French Toast

3 slices of thick cut raison bread
Cream Cheese
1 Egg
1/3 Cup Milk
Vanilla

1. Trim crusts from raison bread
2. Spread with cream cheese
3. Cut each slice on diagonal and put cheese sides together to make a triangle
4. Mix egg, milk and vanilla
5. Dip raison bread in egg and milk mixture
6. Grill at 400 until golden brown. Turn and grill other side
7. Serve with bacon or sausage and maple syrup.

Serves 1

On both these recipes, the egg mixture is enough to do a couple of servings. Just double up on the bread & fillings if you are serving more than 1
