Recipesmakes 5 or 6 waffles
Separate 2 eggs and beat whites with 1 Tblsp. sugar until stiff
In another bowl, beat together:
2 egg yolks,
1 1/2 cups milk,
Add:
2 cups flour
4 tsp. baking powder
1 tsp. salt,
When blended add:
2 Tblsp. Marg. melted
Fold in egg whites, cook on iron 3.2 or 3.3 minutes until golden.
Place on rack in oven at about 125° . I leave the oven door open so they dry or else they become tough.
I only use this recipe when I am serving 2 or 3 people. Any more than that made ahead I find are not so nice.
I pile fresh cut fruit on top, a mound of whipped cream on top of that, a sprinkle of chopped pecans, a dusting of icing sugar and it is a site to behold!
I serve either a berry syrup or maple on the side.
It goes over very well with guests.
For larger numbers of guests, I use the crisp oatmeal waffles that used to be on the board. Not sure whose recipe it is.
