Recipes1 cup flour
1 tsp. baking powder
1/2 tsp. salt
1 egg
1 cup buttermilk
1 Tbsp. sour cream
1 Tbsp. honey
3/4 cup berries
Combine flour, baking powder and salt in 2 qt. bowl. Thoroughly mix egg, buttermilk, sour cream and honey. Combine with dry ingredients.
Pour batter on hot griddle, arrange several berries on each pancake. Cook approximately 3 minutes on each side. May need to cook a little longer if using frozen berries.
Makes approximately 8 pan cakes.
Orange Butter
1/4 cup unsalted butter, softened
1 tsp. orange zest
1 tsp. orange juice
Mix all ingredients together. Evenly smooth butter 1/2 inch thick, onto plastic
wrap sheet on a plate. Cool in fridge, and cut into shapes with small cutter.
(hearts, etc.) This butter can be made in advance and frozen for later use.
