Recipes I used it as a main. Instead of stacking the phyllo like a tower (so to speak) I put it together more like a fan. Made a mixture of canned apricot and whole cranberry sauce and put that on the plate as well. It complimented quite well.
Nothing left on the plates, so that's a good sign. It is not a huge portion, but since I serve it on lunch size plates, it looked very attractive.
1 lb Brie (or combination of Brie, cream cheese and ricotta) at room temperature
3 sheets phyllo dough
½ cup butter, melted
½ tsp butter
3 appels, diced
½ tsp fresh thyme
1 Tbsp maple syrup
1 tiny pinch cinnamon
1 Tbsp butter
1 tsp br sugar
1/3 cup almonds
1 Tbsp icing sugar
6 mint leaves
Preheat oven to 425 F
Remove rind from cheese then whip with an electric mixer until light and smooth
Lay out 1 sheet of phyllo dough on a pastry board and brush with melted butter.
Place second sheet on top and brush with butter. Repeat with remaining sheet.
Cut stack into 18 pieces of equal size, place on non-stick baking sheet and bake for about 5 min or until lightly browned.
In a frying pan over medium heat melt ½ tsp butter. Add apples and thyme and cook until apples start to slightly soften. Add maplesyrup and cinnamon and continue cooking until liquid has evaporated *
In another frying pan, melt 1 Tbsp butter and brown sugar. Add almonds and cook until caramelized.
To assemble, place a piece of phyllo in centre of plate, top with a spoonful of whipped cheese* and 1 spoon of cooked apple. Repeat with a second piece of phyllo, cheese and apple. Top with last peace of phyllo. Sprinkle with glazed almonds and icing sugar. Garnish with mint leaf.

*don't want the apples to get too soft.
*after doing it once, I think putting the whipped cheese in a pastry bag would be a real time saver.
