Recipes 1 quart buttermilk poured over 5 cups bran mixed with 3 tsp baking soda.
Let sit for ½ hour.
Mix:
3 eggs
1 cup oil
1 cup brown sugar
1 cup white sugar
1 tbsp salt
Mix:
3 cups whole wheat flour
3 tsp baking powder
cinnamon, ginger, nutmeg (optional)
Blend all together.
Store in Tupperware container.
Keeps 3 weeks in fridge.
To bake:
Fill muffin cups 2/3 and bake at 350* for 20-22 min.
For mini muffins bake 12-15 min.
Can mix in raisins or other fruits before baking.
