No single food item causes such excitement as "Grandma's butter tarts". This is the recipe that has never been written in a useable fashion. The classic quantity that comes to mind is "a scoop of butter about as large as your fist". This is truly a Canadian "handed down" recipe.
2 eggs, beaten
2/3 cup butter, melted in micro
2 cup brown sugar
4 tbsp milk
1 1/2 cup raisins packed to measure(can also add chopped pecans)
3/4c currants
2 tsp vanilla
First mix the egg with the brown sugar and butter and mix until frothy. Mom's
mother always gave her the mixing job. "Mix it some more," she would
usually say.
Fill tart shells to the top
Bake in a hot oven (450?) 8 minutes and reduce temp to 350? a few minutes longer.
Makes 12 to 15 large tarts.
Watch the tarts-- when the filling is bubbling over they're done.
