Canadian Sunshine Breakfast

Dedicated to Lore at Schaferhof who asked for some of our sunshine today.
She has to promise to send some back when we need it.

Put in a small quiche dish for two people, or a pottery bowl. The mixture will puff and blossom in the oven heat, so be sure your guests are ready for the presentation at the table.

SERVES 2

3 eggs
1/2 cup, flour
1/2 cup, milk
1/4 cup, granulated sugar
2 Tbsp frozen orange juice concentrate (thawed but not diluted)
1 tablespoon, melted butter
2 tablespoons butter
Two peach halves, one in each small quiche dish to represent the sun.

The puffed part represents one of Canada’s three oceans. How is your guests’ knowledge of Canada?

Preheat the oven to 450 degrees. Divide the 2 tbsp of butter between the two ovenproof dishes, placing 1 tablespoon of butter in the bottom of each dish.

In a mixing bowl, combine the eggs, flour, milk, sugar and orange juice concentrate, blending thoroughly. Add the melted butter and mix well.

Place the prepared dishes in the preheated oven until the butter in each has melted, but is not browned. Divide the batter between the four hot dishes, return them to the oven, and bake at 450 degrees for about 20 minutes or until puffed and golden.
