I found what I think will be a wonderful addition to my "dinner guest file"
Since we are all in the hospitality business, I assume that most of us also like to cook other meals. Found this in the current issue of the TV Guide, and had to share it.

Caviar Cake

Ingredients:

6 hard-boiled eggs, finely chopped
2 TBSP. green onion, chopped
2 TBSP mayonnaise
salt and pepper
1 TBSP butter
1 med. onion, finely chopped
1/2 cup celery, finely chopped
1 pkg. cream cheese
1/3 cup sour cream
2 jars (50 g each) red and/or black lumpfish caviar
Green onion for garnish

 

Method:

-In a small bowl, mix chopped eggs, green onion and mayonnaise and spread evenly into the base of an 8 inch spring form pan.

-In a small skillet, melt butter, and cook onion and celery until tender-crisp, then layer over the chopped egg base. ( I would prbably do this first and then let it cool a little)

-In small bowl, beat together the softened cream cheese, and sour cream until well blended, then spread carefully over the onion and celery layer.

-Cover, and refrigerate until ready to serve.

-Just before serving, cover the top of the "cake" with caviar and garnish with green onions. Would also look fabulous with a ring of edible flowers!
-For eye catching presentation, arrange 1 jar each of red and black caviar in alternating circles surrounded by a final ring of chopped green onion.

NOTE: when done in the spring-form pan, when you take the outer ring off, you see the nice layers, and this can then of course be surrounded by a variety of crackers on a pretty large plate/dish.
I think it would also look very nice just done in any pretty dish.
