As a celiac myself, I'd like to offer a quick run-down for feeding your celiac/gluten-free guests. They will love you for it!

Guide to Celiac Food Prep

DO SERVE THEM:

Flours: white and brown rice flour (brown rice flour has to be refrigerated). corn, potatoes, nuts, beans, peas, tapioca, sorghum, soy, quinoa, amaranth, millet, and buckwheat are gluten free. There is always the danger of cross contamination so you may not want to buy these from bulk supplies. More and more health food and specialty stores offer these products.

WHEAT FREE IS NOT NECESSARILY GLUTEN FREE !

ONLY USE MAGIC BAKING POWDER AS IT DOESN'T CONTAIN GLUTEN AT THIS TIME

Celiacs can eat eggs, most cheeses. (Roquefort or Blue Cheese can be suspect. ) Dairy products are OK unless they are also lactose intolerant. You do have to read labels on some ice creams and yoghurts to ensure there are no gluten products contained in them.

Fruit and Nuts and vegetables are all OK.

DON'T SERVE THEM

Wheats, oats, barley, triticale, spelt or kamut. These can be found in bran, bread crumbs, bulgar, cereals (malt or malt flavouring) Crackers, graham flour, malt vinegar, matzo, semolina, pastas including orzo, barley grass, unlabelled spices as they can contain flour, beer !

Soy sauces. flavourings in meat products, imitation seafood, marinades, sauces, canned soups, peanut butter, HVP (hydrolized plant protein) TVP (texturized vegetable protein) or modified food starch unless the source says what the plant protein is. eg corn .

Occasionally icing sugars contain wheat flour to prevent clumping so read those labels

You do have to read all labels when feeding celiacs as you would be surprised how many foodstuffs contain wheat or other gluten. Unfortunately suppliers do change their ingredients from time to time so it is an ongoing task to read labels. Be aware of cross contamination when cooking foods.

At a later date I will send some basic substitutions to convert regular recipes to gluten free and some additional recipes.
