Our Canada Bed and BreakfastRecipes

This cake has delicious swirls of cinnamon/sugar and is baked in a loaf pan. It slices like a dream and is very elegant to serve.

Cinnamon Cake

In large bowl combine:
1 cup sugar
1/4 cup Crisco oil
2 eggs
1 tbsp. vinegar (add milk to make 1 cup)
1 tsp. vanilla

In small bowl mix:
2 c. flour
3/4 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder

In small bowl mix:
3 tbsp. sugar
1 tbsp. cinnamon

Mix wet and dry ingredients. Put half the batter in a greased loaf pan Sprinkle on half the cinnamon mixture. Add rest of batter and top with rest of cinnamon mixture. Bake at 350 F for 50 - 55 minutes. Serve warm or cold.
