A filling for crepes that I sometimes use is 1 cup cottage cheese, 1 cup sour cream, 1/2 cup powdered sugar. Mix in a blender until it is smooth. Fill crepes, either rolled or folded in quarters. Top with fruit sauce. I like to do this one in the summer and top with fresh strawberries and whipped cream.
