3/4 cup finely chopped onions
3/4 cup finely chopped celery
3/4 cup finely chopped sweet red pepper (or green/yellow)
2 cups peeled tomatoes
1 bay leaf
1 dried, hot red pepper, optional
Salt & freshly ground pepper to taste
2 Tbsp. olive oil
1. Heat olive oil in a saucepan and add the onions, celery, and red pepper.
Cook, stirring until onion wilts.
2. Add the tomatoes, bay leaf, hot pepper, salt & pepper. Bring to the boil.
Cook about 10 minutes.
Serve warm.
