Date and Brown Sugar Muffins
Glutten-free

1/4 cup butter or vegetable oil
1/4 cup dark brown sugar
2 eggs
3/4 cup plus 1 Tblsp. buttermilk, yourt or applesauce
2/3 cup cornmeal
1 cup brown rice flour
1 tsp. gluten-free baking powder
1/2 cup chopped dates.

Set the oven at 400°. Lightly oil 6 muffin cups. Stir together the butter or oil and sugar. Add the eggs and mix well. Stir in the buttermilk, yogurt or applesauce, then add the dry ingredients. Mix just to blend, then spoon into muffin tins and bake for 20-25 min. or until done. Bakes 6 large muffins.
