1 c Juice or enough to cover oat mix
1 tsp Vanilla
1 c Rolled Oats
1/4 - 1/2 c. dried fruit (cut into small bits)
1 tsp Cinnamon
Mix together, cover and leave overnight. Stir in morning and if "gluey" add more juice.
Use as is, or add 1/2 c. chopped almonds or cashews.
Put in parfait cups, top with scoop of yogurt, a sprinkle of dried fruit and
a bit of cinnamon. Serves 3-4.
Or, i morning stir in
1 cup slivered almonds and
up to 1 cup additonal juice to thick moist consistency like chunky porridge.
Vegan: Top with soy yogurt, cinnamon and a sprinkle of almonds
Regular: Top with French Vanilla Yogurt, cinnamon and a sprinkle of almonds.
Finish with a primula, pansy or sprig of mint.
