-Grease as many Texas Muffin tins as you need (or use ramkins).
-Put one slice bread (I use whole wheat) in each cup (crustless) - press gently
down
-Add whatever you like. I use cheese and then either chives, parsley or whatever
fresh herbs are in the garden. Dash of garlic. You don't need a lot as the eggs
are the main ingredient.
-Crack in an egg.
-Bake at 350 F for 20 min.
-Serve with hollandaise sauce.
I created a 'Heartsmart' version this weekend that the guests raved about.
I didn't try it myself.
-Instead of cheese I sauteed (in water) some chopped mushrooms and a smidge
of red onion, threw in a little basil.
-1 1/2 egg whites lightly beaten with a little more basil added, instead of
the eggs. I added a little bit of baking powder to this and they puffed up beautifully!
-No Hollandaise sauce.
