Per person:
2 slices bacon
2 eggs
Salt and freshly ground pepper to taste
Parsley or chives for garnish
Cook the bacon until it is almost crisp. Drain on paper towels Spray a muffin
pan and line the sides with the bacon. Add the eggs and season with salt and
pepper. Bake in a preheated 350F oven for 8 to 10 minutes, or until the eggs
are done to your preference. Garnish and serve immediately.
