This dish is good for those who are lactose intolerant and for anyone else! My experience has been that if they can't tolerate milk, most often they can still have a small amount of cheese. (Ask them about it)
Scramble eggs (usually 2 per person, or more if it is a man with a large appetite.) Mix a little water with the eggs. Do not over cook. A little moist is better than dry.
Place cooked eggs in the individual dishes or in a casserole. Place in 175°F oven while doing the next step.
Stir-fry red onion, celery, mushrooms, zucchini, and at the last a little chopped red pepper or seeded tomato. Do not overcook the pepper or tomato, just heat it through.
Place the veggies over the eggs, top with shredded cheese and put back in the oven until cheese is melted and it is time to serve.
Serve a mild or medium salsa on the side.
This is a good dish to keep in mind as it is easily made to order for the number of people at the table. I serve it with sausage or bacon and toast.
