Ginger Apple Steamed Pudding

A wonderful dessert for Christmas dinner especially for ginger lovers!

1/4 c butter
1/2 c packed brown sugar
1 egg
1/2 c molasses
1 tsp. grated lemon rind
1/2 c millk
2 Tbsp lemon juice
4 tsp. finely minced candied or preserved ginger( I usually add some grated fresh as well)
1 1/2 c flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. grated nutmeg
1/2 tsp. cinnamon
1 large apple peeled and chopped
Cream butter and sugar in a large bowl. Beat in egg, molasses, lemon rind, milk lemon juice and ginger.
Sift together dry ingredients in a medium bowl.
Combine, then add apple and fold into mixture. Put into buttered 1 quart mold and steam 1 1/2 hours.
Serve with warmed ginger marmalade glaze and ice cream or whipped cream.
For molds I use 2 1 lb. coffee cans.
