Ginger and Pistachio Slice

Yum! This is devine and very easy to make.

For the base:

1 cup shelled pistachios (you could use walnuts/pecans)
125g butter, melted
1 packet vanilla wine biscuits -(any sweet plain biscuit is fine)
1 cup coconut
1 tsp ground ginger
1/2 cup sweetened condensed milk


Crush the biscuits inside a plastic bag with a rolling pin - not too fine.
Lightly roast the nuts in the oven or in a dry pan - 5 minutes and watch you don't burn them.
Add half the nuts to the butter along with all the other ingredients.Mix well and press into a sandwich tin(pan). Chill

For the icing:

To 80g of softened butter add:
2 cups icing sugar
2 tblsp golden syrup
2 teaspoons ground ginger
2 tblsp milk

Mix till smooth then spread over base and sprinkle remaining nuts on top.Cut into slices.
Store in the fridge or freeze some for later.

If you don't know what to do with the other half of the can of milk make a double quantity and freeze for later.
