Goat Cheese Popovers


I found this recipe in the current Good Housekeeping magazine, and thought that it would make a good addition to our savoury brekkies!

From Good Housekeeping:

Goat Cheese Popovers
White Rocks Inn B&B,
Wallingford, VT

Prep. Time, 10 min.
Bake, about 30 min.

Ingredients:

3 large eggs
¾ cup all purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
pinch ground nutmeg
1 cup whole milk
¼ heavy or whipping cream
2 oz. soft goat cheese with herbs

Method:
1. Preheat oven to 400 degrees F. With pastry brush, gently brush bottoms and sides of 12 muffin cups with oil. Place cups in oven while it is pre-heating.

2. In blender, place eggs, flour, salt, pepper and nutmeg. Pulse until just blended. Then, with blender at low speed, with center part of cover off, slowly pour in milk and cream and blend until just smooth, scraping down the sides.

3. Remove pan from oven, place 1 tablespoonfull of the batter in bottom of cup. Slice cheese into 12 sections, and place one slice into each cup. Top with remaining batter.

4. Bake popovers for approx. 30 to 35 min. until brown, remove from pan, and serve hot.
