RecipesI saw a bit of a program on TV last week where they made a salsa to accompany some fish. It sounded interesting to me, so even though I didn't get the real ingredients list, I tried to make it. It turned out fabulous. We were having my son's in laws over for dinner for the first time. They were visiting from Sioux Falls, South Dakota.
Ing:
1 red pepper, seeded and cut into quarters. (Lengthwise)
1 yellow pepper, seeded and cut into quarters
1 jalapeno pepper (seeds removed if you are not for hot things)
1 avocado cut in half, seed removed, skin left on.
Juice of one or two limes
1 or two tomatoes, core removed.
salt and pepper to taste.
Method:
Brush all vegetables with olive oil, place on BBQ grill and grill until lightly charred, including the avocado.
When veggies are cool enough to touch, cut into bite sized chunks, add lime juice and mix well.
NOTES: I found the tomato to make the salsa a bit mushy, so the next time I
will just use a couple of fresh tomatoes.
Also, I think a bit of grilled onion would be nice! The smoky flavour was really
good.
I grilled the veggies on Saturday with dinner, and it still looked very nice on Sunday.
I think it would go nicely as a side dish with scrambled eggs.
