Kiwi Fruit with Lemon Cream

You can substitute any fruit that goes with lemon

1 lemon, zest and juice
1/4 cup sugar
1 cup yogurt, drained *
4 kiwi fruit, peeled and sliced

Grate zest from lemon and reserve. Squeeze juice; you should have about 1/4 cup. Combine zest with juice and leave to soak for 1 hour.
Whisk together lemon juice and zest, sugar, and yogurt in a large bowl. Layer lemon cream and kiwi fruit in sorbet glasses. Garnish with extra kiwi fruit.
*To drain yogurt: Set a cheesecloth lined sieve over a bowl, or use a paper coffee filter inside a plastic Brita cone. Add yogurt, cover and refrigerate overnight. Discard liquid and use yogurt in recipes or as a substitute for sour cream.
