Recipes(makes 12 med-large)
3 cups flour, 2 tablesp baking pwdr, 1/2 teas salt, 3/4 cup castor sugar, 2 eggs, 1/2 cup diced kiwifruit, 1 cup milk, few drops vanilla ess, 100gms cooled melted butter.
Sift flour, BP, salt & sugar into bowl,
In a jug blend together eggs, vanilla & milk, then
combine with dry ingreds, at the same time blending in the kiwifruit and melted
butter gently.
Half fill muffin tins with mixture, place 1 teas cream cheese in centre then
top with remaing mixture
Bake @ 220C 15-20 mins
Dust with icing sugar before serving at room temp or slightly warmed.
You can replace the kiwifruit with 1/2 cup passionfruit pulp....is yummy too
