Lemon Rice

2 1/2 c chicken broth
1 c uncooked rice
1 garlic clove, crushed
1 Tbsp. chopped fresh lemon rind
2 Tbsp. dill
2 Tbsp. butter

Mix broth, rice and garlic in saucepan. Bring to boil, cover and reduce heat. Cook on low heat for 20-30 minutes until liquid is absorbed. Add Lemon rind, dill and butter. Serve with chicken or fish. Serves 6. From Best of Bridge "Aces"

For the Chicken broth, I just add two sachets of the Oxo Chicken Boullion to the rice water when cooking. I also put the grated lemon rind in with the rice while it is cooking (done by mistake at first, then found I really like it that way). I buy the dill from the supermarket as I do not grow it "yet", but if I do not have it in, then the dish is still good without!! Enjoy - we love it, hope you do too. Have only tried it with Uncle Ben's Converted Rice as that is what we always use!!
