Luscious Lemon Sauce


1 cup sugar
2 tbsp. cornstarch
1/2 tsp. salt
1 1/4 cups water
1 egg, beaten
1/3 cup lemon juice (fresh tastes best)
1/2 tsp. grated lemon peel
2 tbsp. butter

In small saucepan, blend together sugar, cornstarch, and salt. Mix in water. Bring to a boil, stirring constantly. Cook 5 minutes, or until clear and thickened. Remove from heat; pour slowly into beaten egg, stirring constantly. Return to heat; cook about 1 minute longer. Stir in lemon juice, lemon peel and butter. Cool.

Strawberries and/or, blueberries, raspberries, blackberries, bananas.

Top waffles, pancakes or plain french toast with fresh fruit and lemon sauce.

I made this for brekkie this morning and served it over blueberries on Belgian waffles w/back bacon on the side, juice & coffee. The guests loved it and even the RRR has declared he now likes waffles! (This was day 2 for our guests & they had the 'full meal deal' yesterday.)
