Low Carb - Gluten Free Waffles


PREPARATION TIME: 10 minutes. TOTAL BAKING TIME: about 15 minutes (depends on waffle maker).
SERVING SIZE: about two 4-inch square waffles or one 7 ½ inch round waffle (or equivalent).
AMOUNT PER SERVING: 4.8 grams of carb, 18.3 grams of protein.

* For slightly lighter waffles, separate three of the five eggs. Add the yolks along with the whole eggs and beat the three egg whites. Fold in last.
** You can increase total whey protein powder to ½ cup and omit the soy protein powder. It adds 3.0 grams of carb to the total count.
In an electric mixer, food processor, or by hand beat the cream cheese and two eggs until smooth, thick, and fluffy. Add the remaining three eggs, one at a time, beating briefly after each addition. Stir the soy protein powder, whey protein powder, baking powder, almond meal, and whipping cream into the batter by hand or at slow mixer speed.
Spoon batter into the waffle iron. Bake until done (generally from 2 to 4 minutes). Always check early. The waffles are delicate, so remove them carefully. Do not pile them on top of one another or they may become soggy. You can freeze leftover waffles and heat them in a toaster (thaw first).

VARIATION: High-Fiber Waffles
These waffles have a delicious, hearty flavor. They are great as a base for savory toppings and for personal waffle pizza (page 185), although they are not gluten-free. They are good with sweet toppings too. Follow the directions for making the basic waffles (page 53). Omit soy protein powder; reduce whole almond meal to ½ cup; add 1 cup unprocessed wheat bran, toasted or plain. Total yield is six or seven servings. A serving has 5.3 grams of carb and 14.6 grams of protein. The fiber provides 4.0 grams per serving.

VARIATION: Cheddar Cheese Waffles
Follow the directions for Basic Waffles (page 53), and add 4 ounces of grated sharp cheddar cheese to the batter. Fold the cheese into the prepared batter and cook as directed. The cheese adds 1.6 grams of carb and 28.4 grams of protein to the recipe. A serving (based on 7) has 7.6 grams of carb
