Now here is a real time saver for any biscuits, scones, jiffy rolls, pancakes, etc.
10 cups flour
1/3 cup baking powder
1 Tbsp. salt
1 lb. shortening.
Mix ingredients, cut in shortening until mixture looks like coarse meal. Store in tight lid container in cool place. When measuring mix, spoon into cup. Do not pack.
Jiffy Cinnamon Rolls:
2 cups mix
1 Tbsp. sugar
3/4 cup milk
Tea Biscuits:
2 1/2 cups Mix
3/4 cup milk
Knead 20 times
Roll half inch thick, cut with 2" cutter
Bake 400° 8-10 min. Makes 12
Buttermilk Scones:
2 1/2 cups mix
1/3 cup sugar
1/2 cup raisins or currants
1/2 cup buttermilk
1 beaten egg
Mix, the mix, sugar and fruit until blended, add milk and egg and mix until
just moistened. Knead on floured board 20 times. Roll out to 1/2" thickness.
Sprinkle with sugar, cut into triangles,
bake 400° 12-15 min. until golden in color. Serve warm with butter and honey
or jam.
These scones or biscuits can have anything added. Lemon juice and zest, bacon bits, grated cheese, etc.
