Here a vegan appropriate menu that we have used:

Apple Polenta Chessboard


Depending on if the guest can have milk products modify accordingly
Choice of decaf Teas and Coffee
Choice of juices
Rick's Milkless cranberry muffins, Oatmeal scones
"Apple -Polenta Chessboard'
Here we have polenta sliced and cut into 2 inch squares about 1/2 inch thick. Reheat the polenta.
Saute apple slices in maple syrup.
Place polenta in a chessboard pattern on a plate.
Fill the open squares with the sauteed apples/syrup
Garnish with edible flowers and some mint ( we like chocolate mint)
