An easy way to add some colour to a plate

Mexican Hash

2 19oz can potatoes, drained and quartered (can use fresh pre-boiled)
1 Tbsp (olive) oil
1/2 cup salsa

Heat oil in frying pan and saute the potatoes until lightly browned, add salsa and heat thru.

The original recipe calls for poached eggs with it, but I find that too tricky to do for 6 people, so I make it with Eggs in Bacon Ring (using precooked bacon makes it even easier) from the CBBH Recipe file.
2 eggs per person. When eggs are almost cooked, remove them from the oven and make sure they are not stuck in the muffin tin. Then divide 1/2 cup shredded cheese over eggs and place them in the oven for a minute or so yet until cheese is melted and eggs are at desired consistency.
It's so handy to have the eggs ready to go into the oven well ahead of time.

Dress it up a little with parsley, tomato slices and sourcream.

People just love it and all want to know how to make it. They can't believe how simple it is.
