Ingredients:
1 tablespoon Flax Seed meal1 tablespoon Water pinch of salt (optional)parchment
paper
How to Prepare:
Mix the flax meal, water and salt together. Divide the mixture into thirds.
Spread one third thinly, about the thickness of 2 centimeters (one dime) onto
the parchment paper. Repeat with remaining thirds. Place on microwave safe plate.
Microwave 1 minute or until the wafers are crisp. Please note all microwaves
vary in cooking times so you might want to check your wafers every 15 seconds
to see how they are cooking.
Remove from microwave and carefully peel the wafers off the parchment paper.
Allow to cool completely. Can be stored in air tight container for one week.
Variations: you can add dried herbs and seasonings of your choice to the basic
recipe. Just be sure to count these additional net carbs.The recipe can be doubled,
however, the cooking time will be doubled.
Sweet Wafer Variations
Sweet Wafer #1:
Substitute a sugar-free, Splenda sweetened flavored syrup for the water. Omit
the salt and follow the above recipe. Net carbs will still be 0.3 grams per
serving.
Sweet Wafer #2:
To the basic recipe, omit the salt and add a packet of Splenda and 1/4 teaspoon
of vanilla extract. Follow the remainder of the recipe instructions. Net carbs
= 1.6 grams. As with the basic wafer you an vary your wafers by adding spices
to the recipe, just be sure to count these additional net carbs.
