1 and 1/2 cups old fashioned oatmeal
1 cup skim milk
1 cup plain yogurt
2 apples, peeled and grated (or chopped small)
1 mango, cubed *
2 tablespoons lemon juice (fresh is best)
2 tablespoons liquid honey
1/2 teaspoon cinnamon
nutmeg (optional)
In a medium bowl, mix all ingredients together. Cover and refrigerate overnight.
To serve: spoon into fruit nappy/parfait glass/teacup and saucer Top with favorite
fruit & yogurt.
*Any fruit can be substituted: peaches, raisins, blueberries, raspberries etc.
