Mushroom Tarts

I’ve had a few marriage proposals after serving this. Canadian law prohibits bigamy, however. Fortunately, there’s nothing illegal about eating a few of these.

Fry together:
2 cups mushrooms
2 tbsp butter
part way through, add 2 diced green onions

When nearly dry, add a bit of butter and about 2 tbsp flour and make a roux.
Cook about one minute to blend flour

3-4 tbsp of sour cream

Turn off the heat and add grated Swiss cheese. (About 1/4- 1/2 cup) Whatever melts, melts, don't have a fit, when you bake it, it will melt.

Using the most interesting bread you have, slice thinly and butter on both sides after removing crusts. Line muffin cups with buttered bread.
Bake in oven without the filling for about 7-10 minutes. Later when you fill, you will bake about 10 minutes or till bubbly.

My variations:
• always mix the mushrooms: shiitake, portabello, regular. Remove the stems of the shiitake--they are too woody.
• Add fresh chives, fines herbes or tarragon at the point where you add the onions.
• always add a bit of French vanilla yogurt with the sour cream. It's a beautiful mysterious flavour and has fewer calories than sour cream straight.
• green or red peppers or both at Christmas diced very finely will add a nice touch.
