THE BEST seafood chowder.
One of my very favourite things to eat is a really thick seafood chowder. Of course, normally it is thickened with potatoes....... and since potatoes are now on the list, I finally checked out my Atkins cookbook.

Gotta tell you, anyone who likes chowder, try this! It is amazing. I did not miss the potatoes at all.

I used some pike I had in the freezer, and made my own stock. I also added some extra clams, and instead of the onion I used leeks. But they are an onion, right????

New England Fish Chowder

2 lbs. cod fillets
4 slices bacon
1 small onion, diced
2 Tablespoons parsley, chopped
2 cups fish stock
1 bay leaf
1 teaspoon seasoned salt
pepper to taste
2 cups heavy cream

Cut fish fillets into 1 inch cubes. Place bacon in deep saucepan over low heat, and saute until golden brown. Add onions and saute until transparent. Add parsley and cook 1 min. more.

Add stock, bay leaf, salt, pepper. Cover and cook for a few minutes to combine flavours. Add fish and simmer for ten min. Add cream and heat just until heated through. Do not boil. Serve immediately.

Makes 6 servings, 3.4 carb grams each.

I took more fish out of the freezer this morning, am gonna make a big pot full! It is yummy.
