Onion Tart from Sumac Ridge Winery

 


I finally bugged Roger at the winery for the recipe for Onion Tarts. Gonna take a while typing, so bare with me. Here goes..

2 large White Onions
1 cup of Swiss Gruyere Cheese Shredded
1 large egg
3/4 cup Whipping Cream
1 teaspoon Paprika
1 regular pie shell

Slice the onion as thin as possible and carmelize them in a pan over low to medium heat for 1 to 1/2 hours, you do not want any of them to brown. Add Paprika and saute for an additional 1 minute.
In a mixing bowl mix whipping cream and egg well.
Spread carmelized onions evenily over bottom of pie shell. Spread cheese evenly over the onions and pour the egg mixture over the top of the cheese to fill in the pie.
Place in pre-heated oven at 375 degrees for approx. one half hour or until golden brown on top.

Serve hot on its own or with lightly tossed greens with a strawberry Vinaigrette.

I have also served it with Sauerkraut sauteed with apples, apple juice and Back Bacon and a Apricot mustard on the side.

Pair with Gewurtzaminer preferably Sumac Ridge Private Reserve :-) I had to sneak that in. Whew, finished. I'm glad that's over. Sore finger from typing..
