Peach Cobbler

Two healthful basics, fruit and bread, are provided in each serving of this dish.

1/2 cup sugar
1/4 tsp. ground cinnamon
1 TBLS cornstarch
4 cups sliced peaches
1 tsp. lemon juice
3 TBLS butter
1 cup all-pupose flour
1 TBLS sugar
1 1/2 tsp. baking powder
1/2 tsp salt
1/2 cup milk

Heat oven to 400 degrees. Mix 1/2 cup sugar, the cornstarch and cinnamon in 2-quart saucepan. Stir in the peaches and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased 2-quart casserole; keep hot in the oven.

Cut butter into flour, 1 TBSP sugar,the baking powder and salt until miture resembles fine crumbs. Sir in milk. Drop dough by spoonsfull onto the hot peach mixture.

Bake until topping is golden brown, 25 to 35 minutes. Serve warm and, if desired, with Cinnamon Whipped Cream.

Blueberry Cobbler: Omit cinnamon, and substitute 4 cups blueberries for the peaches.
