These are excellent cookies and you'd never know there is no flour.
1C peanut butter(creamy or crunchy)
1C sugar
1egg
1tsp.baking soda
Beat peanut butter and sugar till well combined. In a small bowl lightly beat
egg then beat into peanut butter/sugar mixture with soda till well combined.Roll
level teaspoons into balls and arrange on baking sheet 1"apart. Flatten
with fork making a crosshatch to about 1-1/2" in diameter.Bake at 350F
about 10min. till puffed and pale golden in colour. Cool on sheet for 2 min
then transfer with metal spatula to racks to cool completely. May be kept in
an airtight container at room temp for 5 days.
