Potato Pie

Yield: 20 servings       

Ingredients:
1 1/2 large bags frozen shredded hash brown poatatoes
2 cups or more diced ham
1/2 cup sliced green onion
1 1/2 cups shredded pepper jack cheese

Instructions:
Mix all together in a large bowl. Season with salt and pepper. Place in baking dish. Pour over combined 8 eggs and 2 cans evaporated milk. Top with 1/2 cup more shredded cheese. Bake 45-60 minutes. Let stand at least 5 minutes before serving. Can all be assembled the night before and baked in the morning.
