Recipes2 c beaten eggs
2 c milk
1/4 t garlic salt
1/2 t salt
1 pack frozen hashbrowns thawed overnight (southern style, what's that??)
3 T oil
3/4 c salsa
1/4 c ranch dressing
2 c shredded cheddar
sour cream, sprig cilantro, cherry tomato or paprika for garnish.
Preheat over to 450 degrees, squeeze as much moisture as you can from
potatoes, toss with oil, layer evenly on bottom of 9 X 13 pan,glass, Bake 45
min or until potatoes start to brown.
While potatoes cook, break eggs in bowl and beat, whisk in milk,salt and
garlic salt,Mix in different cup salsa and ranch drsg. When potatoes are
browned turn oven to 325, sprinkle 1 c of cheese over potatoes and dribble
salsa mixture over top. Pour egg mixture all over and return to oven about
35 min.or until eggs set.sprinkle remaining cheese and put in oven about 10
to 15 more min until cheese melts.
Serve with dollop of sour cream,and topping and salsa on the side.
