1 pkg puff pastry
proscuitto - thinly sliced - about a pound
mustard (Dijon)
grated parmesan cheese
egg yolk
Thaw pastry (overnight in fridge) and roll 1 half to about a 9x13 sheet.
Lightly spread with mustard. Sprinkle with parmesan.
Top with single layer of proscuitto.
Repeat with other half of pastry.
Starting on long side roll to the centre from each side.
With sharp knife slice in 1/2 inch slices and place cut side down on cookie sheet. Lightly beat egg yolk with some water and brush on roll-ups.
Bake in 350 oven 25-30 min until golden brown. Transfer to wirerack or serving tray. Serve warm or at room temperature (don't refrigerate)
